Stuffed mushrooms of any sort are always a winner in my book, but stuff them with sweet crab and creamy brie, and you pretty much have the best thing ever. I know that Courtney would love these. - wash. mushrooms well and remove stem. melt butter in skillet and put mushrooms in skillet with tops down. stir mushroom only until they r well coated and 'yellowish'.
- put mushrooms in a glass baking dish. cut pieces of Brie to fit in each mushroom. Really crowd the mushrooms … top down. paper and wax needs to be removed from the cheese…..
- in the unclean skillet that the mushrooms were cooked in fry parsley, onion, and garlic
- until onion are cooked. add a pinch of salt and pepper.
- pour parsley mixture over mushrooms.
- bake at 350° for 35 Minutes.

In a medium skillet over medium heat, melt butter and caramelize onions and mushrooms. Incredibly delicious stuffed mushrooms, made with a flavorful mixture of crispy bacon, spinach and Italian cheese mix. Cut the brie into small squares and lightly press into the mushrooms, where the stems were removed from. Halve the brie horizontally and set aside. Saute the onion in the butter until soft.
